HOW TO MAKE THE PERFECT ICED TEA

While it is possible to make iced tea from brewing the tea in boiling water as usual and allowing it to cool, we would advise making iced tea from a cold brew. Cold brews are made when the tea is allowed to infuse in cold water for 6-8 hours. This slower process allows for each tea’s unique flavours to come through, while minimising the bitterness and harshness of its natural tannins. Cold brews also have lower levels of caffeine, a smoother taste and equal if not higher levels of antioxidants. This is what makes iced tea such a great replacement for soft drinks.

1. CHOOSE FROM A RANGE OF FINE TEAS & HERBAL INFUSIONS

WHITE TEA

White tea tends to taste better than hot brew and yields high levels of antioxidants. Furthermore, white tea as a cold brew tends to be sweet on the palate and low in caffeine.

All green teas make good cold brews. They’re also perfect for increasing energy and boosting the metabolism.

OOLONG TEA

Any type of oolong from our Mint Oolong to our Pomegranate & Hbiscus Oolong will make for an exquisitely flavourful cold brew. Adding lemon or other citrus juice to the tea can also help sustain the tea’s antioxidants.

BLACK TEA

When cold brewed, Black tea becomes smooth and mellow. This helps to bring out other flavour notes inherent in the tea.

OUR STORY

Together with our Tea Master, Lalith Lenadora, we set out to find the perfect way to make iced tea using our fine loose leaf teas. We experimented with many tea varieties, brewing them hot and cold, adjusting the quantities and infusion times until we created a collection of unique recipes including The Staunton Earl Grey & Orange Blossom Cordial, Kama Sutra & Lavender Cordial, Mint Oolong & Rose Cordial and Blend 68 Tropical White Tea & Hibiscus Cordial. Each demonstrates how to cold brew the loose leaf tea and combine it with a few drops of cordial and decorative sugar to create the perfect summer refreshment.

WHAT MAKES OUR ICED TEAS SO UNIQUE

Making the perfect iced tea is all down to the chosen method and quality of ingredients. This takes into account the type of water used and the freshness of the tea. Our teas have each been carefully selected by our Tea Master, who works closely with the farmers to pick, process, and craft select tea leaves to our desired profiles delivering them within 21-28 days (vs. industry average of 6 months). This end-to-end involvement makes our teas distinctive in character and the freshest they can be.

THE STORY OF PUNCH


From India Pale Ales to Gin and Tonic, The East India Company influenced the revelry scene in the 17th and 18th centuries. Arguably, though the most interesting cocktail they introduced to England from India in the early seventeenth century was the Punch. In those days known as Paanch, which translates to mean 'five' in Hindi – this referred to a drink made of five ingredients: water, fruit, tea, sugar and alcohol, and was a summer elixir used to escape the searing Indian heat. Over time the word for this wonderful combination of flavours slowly changed to ‘Poonch’ and then ‘Punch,’ as we know it today. For more recipes visit Tea Cocktails
